Quinoa Feta Salad
A fresh and filling salad, rich in plant protein with vibrant Mediterranean flavors.

Ingredients
80g uncooked quinoa
80g feta cheese
100g cherry tomatoes
1/2 cucumber
50g pitted black olives
1/4 red onion
2 tablespoons olive oil
Juice of one lemon, fresh mint, salt and pepper
Instructions

Cook the quinoa in twice its volume of salted water for 12 to 15 minutes. Drain and let it cool.

Halve the cherry tomatoes, dice the cucumber and thinly slice the red onion.

Make the dressing by whisking together the olive oil, lemon juice, salt and pepper.

In a large bowl, combine the cooled quinoa, vegetables and olives.

Crumble the feta over the top, drizzle with dressing and garnish with chopped fresh mint.
